Fermentation takes place in stainless steel tanks, with a carefully judged addition of fresh Aleppo pine resin that enhances, rather than dominates, the wine’s character. The wine is matured on its fine lees for around three months, adding texture and complexity. Bright aromas of lemon zest, green apple, white peach and wild herbs are complemented by subtle pine and mineral notes.
