The red-grape component is predominantly Zweigelt and Pinot Noir, complemented by St Laurent, while Pinot Blanc, Pinot Gris and Chardonnay complete the blend. This gives the wine considerably more breadth and savoury depth than a conventional Blanc de Blancs, while retaining the freshness associated with Loimer’s Langenlois vineyards.\u003c\/p\u003e\n\n\u003cp\u003eThe grapes are selectively hand harvested and whole-bunch pressed, with only 50 litres of juice obtained from 100kg of fruit. The base wines ferment spontaneously in stainless steel and undergo malolactic fermentation, followed by six months on full lees and a further two months on fine lees before bottling for the second fermentation. It then spends at least 18 months on its lees and is disgorged with just 2g\/l dosage.
