The site’s limestone-laced glacial clay and silt soils are sheltered by the surrounding Carolinian forest and ravines, while the vines are planted at high density with Burgundian Dijon clones. At around 20 years old in 2020, these vines produce naturally low yields and remarkably focused fruit. The 2020 vintage was warm and dry, with cool nights in September allowing the grapes to ripen slowly while retaining freshness. \u003c\/p\u003e\n\n\u003cp\u003eThe fruit was completely destemmed after careful manual sorting, followed by a short cold maceration and spontaneous fermentation with indigenous yeasts. After fermentation, the wine remained on its skins for several additional days to extract the perfume and structure appropriate to the vintage and site. It then underwent natural malolactic fermentation and spent 20–22 months in selected French oak barrels, typically with around 25% new oak, before a further period in bottle. The 2020 is remarkably graceful, opening with raspberry liqueur, wild strawberry, pomegranate and fresh plum, alongside cloves and dried floral notes.
