The Premier Cru Forêt vineyard lies on classic Kimmeridgian limestone soils rich in clay and fossilised marine material, giving the wines their hallmark minerality. The cool continental climate ensures slow ripening and precise, high-acid Chardonnay.\u003c\/p\u003e \u003cp\u003eThe 2021 Forêt is hand-harvested and fermented with indigenous yeasts in used oak barrels. The wine undergoes malolactic fermentation and is aged for around 12 months in old oak feuillettes, followed by further bottle ageing, with no new oak influence. The 2021 shows notes of citrus, green apple, white flowers and oyster shell, with a finely etched mineral core and elegant texture.
