The vineyards for As Xaras are located in Ribeira Sacra, where dramatic slopes and a mix of slate, schist and granite soils contribute to mineral tension and complexity. The Atlantic-influenced climate, with warm days and cool nights, allows slow ripening and excellent aromatic development. The wines are typically made with minimal additives and only small amounts of sulphur added right before bottling.\u003c\/p\u003e\n\n\u003cp\u003eThe grapes for As Xaras Mencía are sourced from old vines planted on terraced hillside vineyards. The grapes are hand-harvested and fermented with indigenous yeasts, often with partial whole cluster inclusion to enhance structure and aromatics. The wine is aged for around 6 to 10 months in a combination of neutral oak barrels and stainless steel to preserve freshness while adding subtle texture. It shows aromas of red cherry, raspberry and wild herbs, with a hint of graphite and spice. The palate is fresh and vibrant with fine tannins and a mineral finish.
