The estate is certified organic and farmed according to biodynamic principles, with all vineyard work carried out by hand to preserve soil health and biodiversity. Vineyards lie in the Vallesina hills near the Adriatic, across sites including Montecarotto and Ostra, at around 250-300 metres altitude. The soils are predominantly clay and limestone, providing structure and mineral tension, while the combination of inland warmth and maritime influence ensures balanced ripening and aromatic complexity.\u003c\/p\u003e\n\n\u003cp\u003eIl San Lorenzo 2009 is made from 100% Verdicchio, selected from the best bunches in top vineyard parcels and produced only in exceptional vintages. Fermentation takes place spontaneously with indigenous yeasts in concrete and stainless steel, followed by an extraordinarily long ageing of around 9 to 11 years on its lees in the same vessels, with no oak influence and a further period of bottle ageing before release. Unfined and unfiltered, the wine shows remarkable depth and evolution, with notes of honey, dried apricot, citrus peel, chamomile, resin and toasted nuts, alongside saline, mineral complexity.
