Their Rully Rouge brings together three village parcels: the clay soils of Meix Cadot, the clay-limestone ground immediately below it, and the limestone of Montagne de Remenot. The vines average around 40 years old, giving the wine considerably more depth and concentration than its regional appellation might suggest.\u003c\/p\u003e\n\n\u003cp\u003eThe 2020 is a particularly expressive example, combining ripe fruit with the savoury energy that keeps the wine fresh and engaging. Hand-picked and double-sorted, the grapes underwent a week of cold maceration before fermentation in conical wooden vats, with the proportion of whole bunches adjusted according to the vintage. Around 12 months in Burgundy barrels, with 33% new oak, is followed by six months in stainless steel. Cherry, darker berry fruit and smoky spice lead into notes of loamy earth, cocoa and liquorice, while the palate is juicy and energetic, with ripe tannins and a distinctly saline finish.
