Grapes are pressed whole cluster and fermented with indigenous yeasts, then aged for around 18 to 24 months in large neutral oak barrels under a topping-up (ouillé) regime to preserve freshness rather than oxidative character. The wine shows aromas of citrus peel, green apple and ripe pear alongside white flowers, subtle hazelnut and a distinctive smoky mineral note. The palate is precise and structured with vibrant acidity, layered texture and a long saline finish.
