L’Éclos des Abeilles draws on three sites around Nantoux, Saint-Romain and Nuits-Saint-Georges, including old Chardonnay vines in cooler, higher altitude locations. The vineyards are farmed using organic and biodynamic methods, with a strong emphasis on biodiversity and healthy soils. The varied limestone and clay soils give the wine both richness and mineral freshness.\u003c\/p\u003e\n\n\u003cp\u003eL’Éclos des Abeilles Blanc 2023 is predominantly Chardonnay, with 10% Aligoté, bringing together the rounded texture of Chardonnay with the variety’s natural acidity and freshness. The grapes are gently pressed before the must is transferred to stainless steel and then oak for fermentation and élevage. The wine spends around a year ageing in wood, developing texture while retaining its freshness. Aromas of ripe pear, white peach and citrus are complemented by acacia, apple butter, brioche, toasted almond and subtle spice.
