Since 2016 the vineyards have been certified organic (ECOCERT) and since 2021 biodynamic (BIODYVIN), with hand-harvesting, low yields and rigorous parcel selection. The vines for Mosaique Calcaire are spread across six lieux-dits: Les Boucauds, Les Chasseignes, Les Denisottes, Les Chailloux, Les Desmalets and La Noue. Based on the classic limestone, calcareous clay and Kimmeridgian soils with vines aged 5-52 years.\u003c\/p\u003e\n\n\u003cp\u003eThe Sauvignon Blanc grapes for the Mosaique Calcaire are hand sorted and pressed using a pneumatic press. The juice is then left to ferment spontaneously using indigenous yeasts. The wine is aged for seven months mostly in stainless steel with around 12-15 % aged in large, used wood barrels. This adds texture without overshadowing the mineral core that is so sought after by Sancerre lovers. Mosaique Calcaire has aromas of citrus, white peach and wet stone, complemented by lime blossom and pear skin. On the palate there is laser-sharp acidity balanced by chalky minerality, lemongrass, green apple and citrus pith. The finish lingers with intensity and freshness.
