These water-retentive smectite clays help the vines maintain a steady water supply through the growing season, while the gravel contributes drainage and structure. The vineyard averages around 35 years of age and is planted predominantly to Merlot, alongside Cabernet Sauvignon and Cabernet Franc. The 2016 growing season was long and favourable, with a dry summer followed by 20mm of rain on 13 September, allowing the fruit to reach excellent maturity while retaining freshness.\u003c\/p\u003e\n\n\u003cp\u003eThe 2016 Château Gazin is composed of 87% Merlot, 8% Cabernet Sauvignon and 5% Cabernet Franc, with the grapes harvested by hand in several passes between 22 September and 17 October. Fermentation was carried out parcel by parcel, with the Merlots picked at different stages according to ripeness. The wine spent 18 months ageing, including malolactic fermentation in new barrels for 45% of the production, while the remainder underwent malolactic fermentation in vats before ageing in one year old barrels. It was bottled in June 2018 without fining with egg whites. At 14% ABV, the wine combines ripe cherry, blackcurrant and plum with violet, mocha, vanilla, cedar and savoury notes. Full and concentrated yet fresh, it has a broad, rounded palate, silky mature tannins and a long, mineral finish.
