The estate follows sustainable vineyard practices with many organically farmed parcels and minimal intervention in both vineyard and cellar. Les Aubues is a highly regarded lieu-dit positioned on the southern side of Puligny-Montrachet near the border with Chassagne-Montrachet, sitting on stony limestone and clay-rich soils with excellent drainage. Wines from Les Aubues are known for combining the precision and mineral tension of Puligny with a slightly broader, more generous texture often associated with Chassagne. The site regularly produces Chardonnay of notable depth, floral complexity and ageing potential. The 2023 Burgundy vintage produced expressive yet balanced white wines, combining ripe orchard fruit with vibrant acidity after a warm growing season moderated by cooler periods during harvest.\u003c\/p\u003e\n\n\u003cp\u003eFrançois Carillon Puligny-Montrachet Les Aubues 2023 is made from grapes that are hand harvested before gentle pressing and traditional Burgundian vinification in French oak barrels. The wine is matured for approximately 12 months in oak, followed by several additional months resting in stainless steel prior to bottling to refine texture and clarity. Around 20–30% new oak is typically used, preserving the purity of the vineyard character rather than overt wood influence. The wine shows aromas of lemon zest, white peach, pear, lime blossom and toasted hazelnut with underlying chalky minerality and subtle spice. The palate is elegant yet concentrated, with vibrant acidity and a long saline finish. Excellent with lobster, turbot, roast chicken, creamy poultry dishes and aged Comté cheese. Drinking beautifully now with decanting, it should continue to improve over the next 10 to 15 years.
