The family’s viticultural roots date back to the 19th century, with the current project established in 2014 by Isaac and Manuel Cantalapiedra focusing on small parcel, terroir driven wines. The estate is certified organic, working with minimal intervention and traditional methods. The El Espejo vineyard is a single site planted at around 750 metres altitude, with old vines rooted in sandy, clay and limestone soils with marl and stones, contributing to freshness, structure and mineral expression.\u003c\/p\u003e\n\n\u003cp\u003eThis wine is made from 100% Verdejo sourced from a single vineyard, with hand harvesting and whole bunch pressing. Fermentation occurs with indigenous yeasts in used French oak barrels, followed by full malolactic conversion and ageing for approximately 11 to 12 months in large oak vessels, then a further 7 months in stainless steel before bottling, unfiltered and with minimal intervention. The wine shows layered aromas of citrus peel, pear and stone fruit, alongside fennel, herbs and a saline mineral character. The palate is textured and complex with fresh acidity and a long, precise finish.
