The Stratum range represents their most site specific wines. El Cerrico 2023 is sourced from a tiny 0.47 hectare parcel in Fuente-Álamo, planted in 1922 with ungrafted (pie franco) Airén bush vines at close to 1,000 metres altitude. The estate is certified organic and certified biodynamic by Demeter. The soils here are a complex mix of chalk and sand over active limestone, delivering tension and mineral precision. The 2023 vintage was warm and dry, producing low yields of intensely flavoured yet balanced fruit thanks to the cooling influence of altitude.\u003c\/p\u003e\n\n\u003cp\u003eStratum El Cerrico 2023 is made from 100% Airén, fermented with native yeasts across a combination of oak, concrete and terracotta vessels to build complexity. The wine then undergoes an extended élevage of around 24 months in 500L oak barrels, both new and used, refining its naturally reductive character. The style is striking and Burgundian in feel, with aromas of wild herbs such as thyme, sage and rosemary, alongside jasmine, chamomile, lemon zest and a subtle flinty note. The palate is structured and mineral driven, with saline freshness and vibrant acidity. It pairs beautifully with shellfish, grilled fish, poultry and refined vegetable dishes. Drinking well now with decanting, it has the capacity to age gracefully for 10 years.
