Although the estate does not currently hold formal organic or biodynamic certification, it employs sustainable, low intervention viticulture to foster healthy vineyards and express the cool, Atlantic influenced Rioja Alavesa terroir. The wines emphasise purity, freshness and precise fruit definition, with careful attention to soil diversity and microclimates.\u003c\/p\u003e\n\n\u003cp\u003eBideona Viura de Cabezadas is made from 100% Viura grapes grown on the highest parts of historic hilltop parcels known locally as ‘cabezadas’. The grapes are hand harvested and gently fermented in stainless steel, with lees contact and vessel selection tailored to the vintage, often combining concrete, stainless steel and used oak to build texture without dominating the fruit. After fermentation, the wine is aged on its fine lees for several months to enhance palate weight and mouthfeel. It shows bright notes of stone fruit, white flowers, citrus and a delicate mineral edge, with crisp acidity and a refreshing dry finish.
