Rodrigo Mendez focuses solely on Albariño to highlight expressions of the iconic Galicia white grape in a completely different light. Until the 1980s, when stainless steel technology was implemented by all wineries, Albariño was fermented with its own indigenous yeast, did not undergo malolactic fermentation and was aged in old wood vessels without temperature control. Unfortunately, wines in this region are not made like this anymore. That is, until Rodrigo brought back this traditional style of winemaking to produce truly, uniquely special wines like Cies.
