Amaury Beaufort is one of the ‘six children’ of Jacques Beaufort, an organic pioneer in Champagne. This has provided him with an impressive insight into organic viticulture, which is complemented by winemaking education from the University of Beaune. In order to better express his personality, he left the family estate and created his own structure in 2018. In winemaking, due to its proximity to Burgundy, there has always been a Burgundian bent, which is undoubtedly reflected in its wines, which come from the kimmeridgien clay-limestone terroir. This wine - quite fascinating, juxtaposing exotic fruit with an invigorating mineral character. The nose and palate are awash with yellow flowers, stone fruit and pineapple, while the finish is intensely chalky, with the coolness of limestone adding length to the all-important acid structure.
