Bernard Defaix Chablis 1er Cru Cote de Lechet 2023

Domaine Bernard Defaix is a family owned estate in Milly, near Chablis, where the Defaix family has cultivated vineyards for four generations. Today, Bernard Defaix and his sons continue to produce wines that faithfully express the distinctive terroirs of Chablis. The estate's vineyards are certified organic and are farmed using sustainable practices that encourage biodiversity and healthy soils. The Premier Cru Côte de Léchet vineyard occupies steep south east facing slopes overlooking the Serein Valley, where the famous Kimmeridgian limestone and clay soils, rich in fossilised marine sediments, impart exceptional minerality, precision and freshness to the wines.

Bernard Defaix Chablis Premier Cru Côte de Léchet 2023 is made from 100% Chardonnay. Following gentle pressing, the wine undergoes temperature controlled fermentation before ageing for approximately 12 months on its fine lees in stainless steel tanks, preserving the purity of the fruit and the vineyard's mineral character. Aromas of lemon, green apple and white peach are complemented by notes of white flowers, flint and oyster shell. The palate is vibrant and finely textured with crisp acidity and a long saline finish, making it a superb accompaniment to oysters, grilled fish, shellfish, roast chicken and soft goat's cheese.
